Description
Climate
The 2021 vintage began with a mild winter, albeit rich in precipitation, including snow, which ensured an excellent water supply in the soil. The vegetative restart was regular, with slight and limited frosts during the middle of April which caused a reduction in production but which did not affect the quality of the harvest. With spring, a long period of good weather began which lasted throughout the summer, where temperatures were recorded without excesses, in line with the averages for the period, with some thunderstorms between June and July. The excellent temperature variations during the harvest period allowed the grapes to reach an excellent state of ripeness and a good balance from the sugar, freshness and polyphenolic point of view.
Vinification
Upon arrival in the cellar, the grapes were de-stemmed and crushed. Maceration took 6 days at a maximum temperature of 27-28 ° C. The malolactic fermentation, which ended in mid-December, preceded the refinement which took place in stainless steel tanks. The Dolcetto was bottled in the spring.
Historical data
Dolcetto, historical wine of the ancient Piedmontese winemaking tradition, meets the refinement in steel, to enhance the fragrance and the fruitiness of the fruit, typical of the variety.
Tasting Notes
The wine has a lively ruby red color. The nose is vinous, characterized by notes of flowers and ripe fruit. On the palate it is full and harmonious with a pleasant almond aftertaste.
